The St. Regis Mumbai Appoints Bruno Fuentes as Director of Restaurants to Strengthen Luxury Dining Experience
The St. Regis Mumbai appoints Bruno Fuentes as Director of Restaurants at Penthouse, bringing over a decade of global hospitality experience from Hong Kong, Bangkok, and Los Angeles. His appointment aims to strengthen the luxury dining and nightlife experience while enhancing guest service, atmosphere, and culinary innovation in Mumbai.
Fuentes, a graduate of California State University, Long Beach with a Bachelor of Science degree in Hospitality Management, has developed extensive expertise across restaurant operations, commercial strategy, guest experience management, and luxury hospitality.
Before joining The St. Regis Mumbai, Fuentes led Guilty Bangkok and Aqua Bar at Anantara Siam Bangkok. During his tenure, Guilty achieved recognition as Bangkok’s top-ranked Peruvian restaurant on TripAdvisor. Earlier, he managed Popinjays Rooftop Restaurant & Bar at The Murray, Hong Kong, further strengthening his international experience in premium dining and hospitality operations.
With professional experience spanning Los Angeles, Hong Kong, and Bangkok, Fuentes is set to contribute to Mumbai’s rapidly evolving dining and hospitality landscape. He expressed his enthusiasm about becoming part of a city known for its energy, cultural heritage, and modern ambitions.
“What excites me most about Mumbai is its incredible energy. It’s a city that blends rich heritage with modern ambition and is constantly evolving. I’ve always admired the warmth of Indian people and I’m excited to experience that every day. I’m equally looking forward to exploring the city’s dynamic food and beverage scene, from iconic local favourites like Vada Pav to the innovative restaurants and bars that are constantly pushing creative boundaries,” Fuentes said.
Fuentes highlighted that his leadership approach will focus on creating memorable guest experiences through thoughtful service, attention to detail, and a distinctive atmosphere. He believes that while guests may remember their food and beverages, the emotions and experiences created by a venue leave the most lasting impression.
“Guests may remember what they ate or drank, but they never forget how a place made them feel. For me, it’s about creating an atmosphere where every detail feels considered, every interaction feels genuine and every visit leaves guests wanting to come back,” Fuentes said.
