Preparing and decorating the recipes also offers an opportunity to get into the Halloween spirit and create a spooky atmosphere for celebrations.
Caramel and California Walnut Spiders
The Caramel and California Walnut Spiders combine soft caramels, walnut halves, dark chocolate and black sprinkles to create a Halloween treat shaped like spiders.
The recipe requires five black liquorice laces, 12 soft caramels, 12 California walnut halves, 140g of melted dark chocolate and three tablespoons of black sprinkles.
To prepare the spiders, cut the liquorice laces into 1-inch pieces using a knife or scissors. Each spider requires eight pieces, making a total of 96 pieces. For a more realistic appearance, the pieces can be cut diagonally to create pointed ends.
Preheat the oven to 180°C. Arrange six caramels evenly on a parchment-lined baking sheet and place one California walnut half on top of each caramel. Bake for three minutes to soften the caramels slightly.
Working quickly, push eight liquorice pieces into the sides of each caramel to form the spider's legs. Repeat the process with the remaining caramels and walnuts, then allow them to cool.
Meanwhile, melt the dark chocolate in a microwave on high for three 30-second intervals, stirring between each interval. Alternatively, use a double boiler.
Spoon or pipe approximately one teaspoon of melted chocolate over each walnut. Sprinkle the chocolate with black sprinkles and allow it to set before serving.
California Walnut Mini Graveyard Dirt Cakes
The California Walnut Mini Graveyard Dirt Cakes bring a Halloween-inspired presentation to a dessert made with vanilla whole milk yogurt, chocolate sandwich cookies and California walnuts.
The recipe includes eight California walnut halves and 70ml of white chocolate melting wafers for the gravestones, along with one small tube of black decorating gel.
For the graveyards, the ingredients include three cups of vanilla whole milk yogurt, six chocolate sandwich cookies and half a cup of California walnut halves.
To prepare the gravestones, place wax paper on a baking sheet. Put the white chocolate melting wafers in a small microwave-safe dish and heat them in 15-second intervals, stirring with a spoon between each interval to prevent the chocolate from burning.
Once the chocolate is almost melted, stir vigorously until all the wafers have melted.
Using a fork, dip each California walnut half into the chocolate, ensuring it is fully covered. Remove it from the bowl and shake off the excess chocolate before placing it on the wax paper.
Refrigerate the chocolate-coated walnut halves for 15 minutes. Remove them from the refrigerator and use the black decorating gel to write the letters “RIP” on each half.
To assemble the graveyards, layer yogurt at the bottom of four short and wide mason jars or glass bowls.
Place the chocolate sandwich cookies and California walnut halves in a food processor and pulse for about one minute, until fine crumbs form.
Spoon the crumbs over the yogurt and place two gravestones in each mason jar graveyard. The desserts can be served immediately or refrigerated until serving.
California Walnut Green Monster Dip
The California Walnut Green Monster Dip offers a savoury option for Halloween celebrations, combining edamame, California walnuts, parsley, yogurt, garlic and salt.
The ingredients include one cup of fresh or frozen shelled edamame, three-quarters of a cup of California walnuts, half a cup of lightly packed parsley, one-quarter of a cup of plain yogurt, one small pressed garlic clove and one-quarter teaspoon of salt.
If using frozen edamame, rinse it under warm water until thawed.
Place the edamame, California walnuts, parsley, yogurt, garlic and salt in a food processor. Whirl the ingredients until the mixture becomes smooth.
The three recipes offer a mix of sweet and savoury Halloween treats, with California walnuts featuring in each preparation. From chocolate-covered spider bites and miniature graveyard desserts to a green monster dip, the recipes provide a range of options for adding a festive touch to Halloween party tables.
