A Brazilian confection called Bala Baiana has become the latest global dessert sensation on Instagram, capturing the attention of Indian food enthusiasts who are comparing the caramel-coated sweet to the much-loved gulab jamun. The dessert has gained massive popularity after a recipe video shared by Instagram creator Sunidhi (@nids.lid) crossed more than 27 million views, encouraging thousands of users to recreate the treat at home.

Known for its glossy caramel coating and soft coconut-filled centre, Bala Baiana has emerged as one of the newest international desserts gaining popularity among Indian audiences. The sweet combines a crisp outer shell with a smooth, fudgy filling, creating a unique contrast of textures.

Originating from Brazil, Bala Baiana is a bite-sized confection prepared with a creamy coconut mixture covered in a crunchy caramel layer. The dessert features a soft interior wrapped inside a shiny sugar coating, making it visually appealing and distinctive.

In her viral recipe video, Sunidhi described the dessert as what "coconut laddoo and caramel would taste like if they had a baby", a comparison that connected with viewers and contributed to its growing popularity.

The ingredients required for the coconut filling include 395 grams of condensed milk, 150 grams of desiccated coconut, 20 grams of butter and a pinch of salt, which is optional.

For the caramel coating, the recipe uses 300 grams of sugar and 120 millilitres of water.

To prepare Bala Baiana, condensed milk, desiccated coconut, butter and salt are combined in a pan. The mixture is cooked over low heat while stirring continuously until it thickens and begins separating from the sides of the pan.

After cooling completely, the mixture is refrigerated until it becomes firm. It is then shaped into small balls and chilled again for another 20 minutes.

The sugar and water are heated together until the syrup develops a deep amber caramel colour. Each coconut ball is then dipped into the caramel, allowing excess coating to drip away before being placed on parchment paper to harden.

The dessert has become a social media favourite because it combines the elements that often drive viral recipes: simple ingredients, an uncomplicated preparation method and an impressive final appearance.

Its glossy finish, satisfying crunch and coconut-rich centre have inspired thousands of people to recreate the Brazilian sweet. Its visual similarity to gulab jamun has further strengthened its appeal among Indian food lovers.

As international food trends continue to spread rapidly through social media platforms, Bala Baiana has become the latest global dessert making its way into Indian kitchens, highlighting the growing influence of worldwide culinary exchanges.
